More Pumpkin Cookies (Decorated by Melissa and Melissa)

Ingredients
1 cup butter, softened
1 cup firmly packed light brown sugar
1 large egg yolk
2 1/2 cups all-purpose flour
1 tablespoon pumpkin-pie spice
1 teaspoon baking soda
1 tube (4.25 ounces) orange icing

1. Preheat oven to 375F. Line baking sheets with parchment paper or leave ungreased.
2. Cream butter with brown sugar in a medium bowl with an electric mixer on low until smooth; stir in egg yolk.
3. Mix flour, pumpkin-pie spice and baking soda in a large bowl. Sitr in the butter mixture. Mix until dough is firm and smooth. Form dough into a disk; wrap in plastic wrap and chill dough for 20 minutes.
4. Roll dough to a 1/4-inch thickness on a lightly floured surface.
5. Cut out cookies with a 3 1/2-inch round cookie cutter and place 2 inches apart on prepared baking sheets. Bake until lightly browned around the edges, 10-12 minutes. Remove from oven and transfer cookies to wire racks; cool completely.
6. Create faces on pupmkin cookies using the orange icing.
makes 2 dozen cookies
