Maple Pear Crisp

Ingredients
1/2 cup plus 2 tablespoons all-purpose flour, divided
1/2 cup firmly packed light brown sugar, divided
6 medium pears
2 tablespoons lemon juice
3 tablespoons maple syrup
3/4 cup rolled oats
6 tablespoons cold butter, cut into small pieces
...
1. Preheat oven to 375F. Coat a 1-1/2 quart baking dish with cooking spray. Combine 1/2 cup flour and 1/4 cup brown sugar in a large bowl. Peel, core and cut pears into slices. Toss with flour mixture. Stir in lemon juice; mix well. Spoon into prepared dish. Drizzle with maple syrup.
2. Combine remaining flour, remaining brown sugar and rolled oats in a medium bowl. Cut in butter until coarse crumbs form. Sprinkle over pears in dish.
3. Bake until mixture is bubbly and pears are tender, 40-45 minutes. Transfer to wire rack to cool slightly. Serve warm.
Helpful Hints
A melon baller is a great tool for coring pears. cut the pear in half lengthwise with a knife, then use the melon baller to neatly scoop out the gritty core.
Mix 'n' Match
For another autumn treat, substitute 6 cups sliced apples for the pears. Granny Smith and McIntosh apples are good varieties for baking.
